  • 200g Fresh Mozzarella, preferably bocconcini
  • 3 tbsp Extra Virgin Olive Oil
  • 2 tbsp Balsamic Vinegar
  • Salt, to taste
  • Freshly Cracked Black Pepper, to taste
  • Fresh Basil, torn

Instructions

  1. Prep the cucumbers: Rinse and slice into rounds, half-moons, or cubes.
  2. Cut the mozzarella: Drain or chop the fresh mozzarella into bite-sized pieces.
  3. Mixing it up: In a bowl, gently combine cucumbers and mozzarella.
  4. Dress it up: Drizzle olive oil and balsamic vinegar over salad, adding salt, pepper, and fresh basil.
  5. Toss time: Gently toss to coat with dressing.
  6. Taste test: Adjust seasoning as necessary.
  7. Chill: Optionally let sit in the fridge for about 30 minutes.
