Easy Cucumber Vinegar Salad with Sweet Onion

A refreshing salad made with hydrating cucumbers and sweet onions, perfect for warm afternoons or barbecues.

Ingredients

  • 4 medium cucumbers (peeled and thinly sliced)
  • 1 Vidalia onion (thinly sliced)
  • 1/2 cup water
  • 2 cups white wine vinegar
  • 1/4 cup granulated monk fruit sweetener (or sugar)
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Peel and thinly slice the cucumbers.
  2. Slice the Onion: Thinly slice the Vidalia onion, soaking in cold water if needed.
  3. Mix the Vinegar Dressing: Whisk together the vinegar, water, sweetener, salt, and pepper.
  4. Combine Everything: In a large bowl, mix cucumbers and onions, then pour dressing over.
  5. Let It Marinate: Cover and refrigerate for at least 30 minutes.
  6. Give It Another Toss!: Before serving, toss the salad again.
