Zesty Simple Dill Pickle Pasta Salad

  • 8 ounces Rotini Pasta
  • 1 cup Dill Pickles
  • 1 tablespoon Fresh Dill
  • 1/2 cup White Onion
  • 1 cup Colby Jack Cheese
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour Cream
  • 1/3 cup Dill Pickle Brine
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, add rotini pasta, and cook according to package instructions until al dente.
  2. Drain and Rinse: Drain the pasta and rinse under cold water to cool it down.
  3. Prep the Other Ingredients: Dice dill pickles and onions into bite-sized pieces, and chop fresh dill if using.
  4. Mix the Dressing: Combine mayonnaise, sour cream, and dill pickle brine in a mixing bowl and stir until well mixed.
  5. Combine Ingredients: Add the cooled pasta, chopped pickles, onions, cheese, and fresh dill to the bowl and gently mix.
  6. Chill the Salad: Cover the bowl and refrigerate for at least 30 minutes.
