Greek Lemon Rice

A delicious and easy Greek Lemon Rice recipe that blends fluffy rice with zesty lemon and earthy spices, perfect as a side or meal prep option.

  • 2 cups raw rice (golden sella basmati)
  • 1 Tablespoon oregano
  • 1 teaspoon dried dill weed
  • ⅓ cup olive oil
  • ½ cup brown onion (chopped)
  • 3 garlic cloves (finely chopped)
  • 2 Tablespoons lemon juice (freshly squeezed)
  • Fresh parsley (for garnish)
  • 3 cups low-sodium chicken broth

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Sauté the chopped onions in olive oil until golden and translucent.
  3. Add the garlic and cook for an additional minute.
  4. Sprinkle in the oregano and dill, stirring to combine.
  5. Introduce the rinsed rice and let it soak up flavors for a few minutes.
  6. Pour in the chicken broth and scrape the bottom of the pot.
  7. Bring to a gentle boil, then reduce the heat to low, cover, and simmer for 15-20 minutes.
  8. Fluff the rice with a fork, then stir in lemon juice and parsley.
  9. Taste and adjust seasonings as desired.
