A spooky and indulgent twist on classic mac and cheese, perfect for Halloween and family gatherings.

  • 2 cups shredded cheddar cheese

  • Salt and pepper to taste
  • Googly eyes (edible candies or olives)

Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water. Add in your elbow macaroni and cook according to the package instructions until al dente, which usually takes around 6-8 minutes. Remember to stir occasionally so they don’t stick together. Chef tip: Reserve a cup of pasta water before draining! It’s liquid gold for adjusting the sauce later.
  2. Prepare the Sauce: In a medium saucepan, melt the butter over medium heat. Once it’s bubbling, sprinkle in the flour, stirring constantly for about a minute to get rid of that raw flour taste. This is your roux, the base of your cheesy sauce! Pro tip: Keep stirring; you want it to form a smooth paste without browning.
  3. Add the Milk: Gradually whisk in the milk. Keep stirring until the mixture thickens, which should take about 5-7 minutes. Chef insight: If you find it too thick, add a splash of that reserved pasta water to loosen it up before adding the cheese.
  4. Incorporate Spinach and Season: With the sauce thickened, stir in the spinach, garlic powder, salt, and pepper. Mix until the spinach is wilted and everything is well combined.
