Homemade Pumpkin Ravioli with Garlic Brown Butter

Celebrate fall flavors with this homemade pumpkin ravioli, drizzled in a rich garlic brown butter sauce.

  • Ravioli (store-bought or homemade)
  • 1 cup pumpkin puree
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • A pinch of nutmeg
  • Salt and pepper to taste
  • ½ cup butter
  • 34 cloves garlic, minced
  • Sage (optional)

Instructions

  1. Combine 1 cup of pumpkin puree, 1 cup of ricotta cheese, ½ cup grated Parmesan, a pinch of nutmeg, and salt and pepper to taste in a large bowl.
  2. Mix until you have a smooth filling. Adjust seasoning as needed.
  3. Create a mound of flour (about 2 cups) on your work surface and make a well in the center. Crack in 3 large eggs.
  4. Incorporate the flour into the eggs with a fork until a shaggy dough forms.
  5. Knead the dough for about 8-10 minutes until it’s smooth and elastic. Wrap in plastic and let rest for at least 30 minutes.
  6. Roll out the dough to about 1/16-inch thickness.
  7. Cut dough into 3-inch squares; place a tablespoon of filling in each square.
  8. Moisten the edges with water, fold over and crimp to seal, ensuring no air pockets.
  9. Boil salted water; add ravioli and cook for about 3-4 minutes until they float.
  10. Melt ½ cup butter in a pan; add minced garlic and cook for 2 minutes until fragrant.
  11. Add the cooked ravioli to the pan and toss gently in the garlic brown butter for about a minute.

Notes

For an elevated flavor, sprinkle extra Parmesan and fresh sage before serving.
