  • 2 tbsp Honey
  • 2 tbsp Chipotle Sauce
  • 1 cup Brown Rice
  • 1 Avocado
  • 1 cup Corn
  • 2 tbsp Lime Juice
  • 1/4 cup Cilantro
  • Salt and Pepper to taste

Instructions

  1. Marinate the chicken by combining chicken breasts, honey, and chipotle sauce in a bowl. Let it marinate for at least 30 minutes.
  2. Cook the rice according to package instructions, rinsing under cold water first.
  3. Heat a skillet over medium heat, add olive oil, and cook the marinated chicken for 6-7 minutes per side.
  4. Prepare the sauce by pouring the reserved marinade into the skillet and letting it bubble for 2-3 minutes.
  5. Assemble the bowls by fluffing rice and placing it at the base, then topping with sliced chicken.
  6. Add toppings like corn, diced avocado, lime juice, and fresh cilantro.
