  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved

  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients: Wash cucumbers and tomatoes thoroughly under cool running water and pat them dry.
  2. Slice the cucumbers: Cut them into thin rounds—about 1/4 inch thick.
  3. Chop the onion: Thinly slice the red onion and soak it in cold water for about 10 minutes if desired.
  4. Halve the tomatoes: Cut each cherry tomato in half and place them in a large mixing bowl.
  5. Combine in a bowl: Toss in sliced cucumbers and red onion with the tomatoes, then sprinkle chopped parsley on top.
  6. Prepare the dressing: Whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper in a small bowl.
  7. Dress the salad: Pour the dressing over the cucumber mixture and gently toss to coat.
  8. Chill (optional): Refrigerate for about 30 minutes to let the flavors marinate.
