Irresistible Mediterranean Pasta Salad

A colorful and flavorful Mediterranean pasta salad featuring vibrant veggies, creamy feta, and a zesty dressing.

  • 14 oz pasta (Barilla rotini or penne)
  • 1 large cucumber, peeled and sliced into 1/2-inch half-moons
  • 18 oz cherry tomatoes, halved
  • 3/4 cup Mezzetta sliced kalamata olives
  • 5 oz feta, crumbled
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup olive oil
  • 4 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 2 tsp oregano
  • 1 tsp honey
  • 3 garlic cloves, freshly pressed
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp red pepper flakes

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. Prep your veggies by dicing the cucumber, halving the cherry tomatoes, slicing the red onion, and chopping the parsley.
  3. Mix the dressing by whisking together olive oil, red wine vinegar, lemon juice, honey, oregano, garlic, salt, pepper, and red pepper flakes in a small bowl.
  4. Combine the cooled pasta, cucumber, cherry tomatoes, olives, red onion, feta, and parsley in a large bowl. Pour the dressing over and gently toss until coated.
  5. Chill the salad in the fridge for at least 30 minutes to let the flavors meld.
  6. Final toss before serving and adjust seasoning if needed. Garnish with fresh parsley to serve.

Notes

This salad can be made a day ahead and stored in an airtight container. Feel free to customize ingredients based on your preferences.
