Crazy Good Casserole

  • 2 cups cooked chicken, shredded
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (e.g., cheddar, mozzarella)
  • 1 cup frozen mixed vegetables (optional)
  • 2 cups cooked rice or pasta
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a medium-sized casserole dish and lightly grease it.
  3. Combine your shredded chicken, cream of chicken soup, sour cream, and cheese in a large bowl. Add in cooked rice or pasta and frozen veggies if using.
  4. Season it up with garlic powder, salt, and pepper and stir well.
  5. Transfer the mixture to your prepared casserole dish and smooth the top.
  6. Add breadcrumbs evenly over the top.
  7. Bake for 30-40 minutes until bubbly and golden brown.
  8. Cool for 5-10 minutes before serving.

Notes

This casserole can be made a day in advance and refrigerated before baking. It’s also perfect for meal prep!
