Healthy Loaded Beef and Potato Bake

A comforting and nutritious spin on the classic loaded beef and potato bake, filled with creamy potatoes, savory ground beef, and gooey cheese.

  • 1 pound ground beef
  • 4 large potatoes, sliced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 cup sour cream or Greek yogurt
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the olive oil in a large skillet over medium heat. Add the diced onions and sauté for 2-3 minutes until translucent. Then, add the ground beef and cook until browned, about 5-7 minutes.
  3. Stir in the minced garlic, paprika, Italian seasoning, and salt and pepper. Cook for another 1-2 minutes.
  4. Layer sliced potatoes in a baking dish. Sprinkle with salt and pepper, add half of the beef mixture, and a dollop of sour cream. Repeat with another layer of potatoes, the rest of the beef, and another layer of sour cream.
  5. Top with shredded cheese.
  6. Bake covered with aluminum foil for 40-45 minutes. Remove foil for the last 10 minutes to brown the cheese.
  7. Let cool for 5-10 minutes before serving.

Notes

Serve with fresh herbs and a side salad for a well-rounded meal. This dish can be prepared in advance and frozen for convenience.
