Easy Rotel Mexican Rice

A vibrant one-pot dish bursting with flavor, perfect for busy weeknights or a taco night fiesta.

  • 1 cup long grain or basmati rice
  • 1 can Rotel diced tomatoes and green chilies
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)

Instructions

  1. Prep your ingredients.
  2. Heat the olive oil in a medium to large pot over medium heat.
  3. Toast the rice in the hot oil for about 2-3 minutes.
  4. Add the can of Rotel and stir well for another minute.
  5. Pour in the chicken or vegetable broth, then add garlic powder, onion powder, salt, and pepper.
  6. Bring to a vigorous boil, then reduce the heat to low and cover with a lid.
  7. Simmer for about 18-20 minutes without lifting the lid.
  8. Fluff the rice with a fork after letting it sit for 5 minutes post-cooking.
