Homemade Chicken Noodle Soup

A cozy and heartwarming chicken noodle soup loaded with tender chicken, hearty noodles, and vibrant veggies.

  • 1 lb boneless, skinless chicken breasts or thighs
  • 3 cups traditional egg noodles (or alternative noodles)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 cups low-sodium chicken broth
  • 1 tsp fresh thyme (or 1/2 tsp dried thyme)
  • 1 tsp fresh parsley (or 1/2 tsp dried parsley)
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping onions, slicing carrots and celery, and mincing garlic.
  2. Add olive oil to a large pot over medium heat, and sauté the onions until translucent, about 5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Toss in the diced carrots and celery, cooking for a few minutes to soften.
  5. Add the chicken to the pot with salt and pepper, and pour in the chicken broth to cover.
  6. Bring to a gentle simmer, cooking for 20-25 minutes until the chicken is cooked through.
  7. Shred the cooked chicken and return it to the pot, then add the noodles.
  8. Cook the noodles according to package instructions until al dente, then stir in the fresh herbs.
  9. Taste and adjust seasoning as needed before serving hot.

Notes

Serve with crusty bread and garnish with fresh herbs for an extra touch of flavor.
