1/2 teaspoon salt
1/2 cup unsalted butter, room temperature (113g)
1 cup granulated sugar (200g)
2 large eggs, room temperature
2 teaspoons vanilla extract
Red gel food coloring
Blue gel food coloring
1 cup powdered sugar (120g)
Instructions
Preheat the Oven: Preheat your oven to 350°F (175°C).
Mix the Dry Ingredients: Whisk together the all-purpose flour, baking powder, and salt in a medium bowl.
Cream the Butter and Sugar: Use an electric mixer to cream the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
Add the Eggs and Vanilla: Crack in the eggs and add the vanilla extract. Beat until well combined.
Combine Wet and Dry Mixtures: Gradually add the dry ingredients into the wet and mix on low speed until just combined.
Divide and Color: Divide dough into three equal portions. Add red gel food coloring to one portion and blue to another, leaving the third portion as-is.
Chill the Dough: Wrap each color of dough in plastic wrap and chill in the fridge for at least 30 minutes.
Scoop and Roll: Preheat oven again if needed. Scoop about a tablespoon of each color dough, roll into a ball, and coat in powdered sugar.
Bake the Cookies: Place sugar-coated dough balls on a lined baking sheet and bake for 10-12 minutes.
Cool and Enjoy: Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
For a nutty cocoa twist, add 1/2 cup of cocoa powder to the dry ingredients.
