Pineapple Chicken Kabobs

Delicious kabobs featuring juicy chicken, sweet pineapple, vibrant bell peppers, and aromatic onions, marinated to perfection.

  • 1 lb Chicken Breast, cut into 1-inch cubes
  • 1 cup Pineapple Chunks
  • 1 Bell Pepper, cut into 1-inch pieces
  • 1 Onion, cut into 1-inch pieces (red or yellow)
  • ¼ cup Soy Sauce
  • ¼ cup Brown Sugar
  • 2 cloves Garlic, minced
  • 1 tsp Ginger, grated
  • Coconut Rice (for serving)

Instructions

  1. Prepare the marinade: In a mixing bowl, combine soy sauce, brown sugar, minced garlic, and grated ginger. Mix well until the sugar dissolves.
  2. Slice the chicken into 1-inch cubes for even cooking.
  3. Marinate the chicken cubes in the marinade for at least 30 minutes, or up to 2 hours in the fridge.
  4. Prep the bell peppers and onions, chopping them into 1-inch pieces.
  5. Assemble the kabobs by alternating marinated chicken, pineapple chunks, bell peppers, and onions on skewers.
  6. Preheat the grill to medium-high. Soak wooden skewers in water for 10-15 minutes to prevent burning.
  7. Grill the kabobs for about 10-15 minutes, turning occasionally, until the chicken is cooked through.
  8. Make the coconut rice while the kabobs grill: cook jasmine rice with coconut milk and water for a creamy side dish.
  9. Serve the kabobs over coconut rice and enjoy!

Notes

Feel free to experiment with different veggies or add fruits like mango for a twist!
