Pumpkin Whoopie Pies

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1 cup cream cheese, softened
  • 1/4 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the pumpkin puree, brown sugar, granulated sugar, and vegetable oil in a large mixing bowl until smooth.
  3. Add in the eggs and vanilla, whisking until combined.
  4. Combine the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves in a separate bowl.
  5. Mix the dry ingredients into the wet ingredients until just combined.
  6. Scoop heaping mounds of batter onto a parchment-lined baking sheet.
  7. Bake for 12-15 minutes, or until the tops spring back when pressed.
  8. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  9. Prepare the filling by mixing softened cream cheese and maple syrup until smooth.
  10. Assemble the whoopie pies by spreading the filling on one cookie and topping with another.
