Pumpkin Whoopie Pies

  • 1/2 cup maple syrup
  • 1 cup cream cheese
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger in a medium bowl.
  3. Combine the pumpkin puree, brown sugar, granulated sugar, vegetable oil, eggs, and vanilla extract in a large bowl.
  4. Incorporate the dry mixture into the wet ingredients, stirring gently.
  5. Scoop heaping tablespoons of dough onto a lined baking sheet.
  6. Bake for 12-15 minutes until set.
  7. Cool on a wire rack before filling.
  8. Prepare the filling by mixing cream cheese, powdered sugar, and maple syrup until smooth.
  9. Assemble by spreading filling on one cookie and topping with another.
  10. Serve immediately or refrigerate to meld flavors.
