Southern Tomato Pie

A delightful Southern Tomato Pie made with ripe tomatoes, fresh basil, and gooey cheddar cheese, perfect for potlucks or lazy weekends.

  • 4 cups ripe tomatoes, sliced
  • 1 large onion, sliced
  • 1 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons fresh basil, chopped
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your pie crust in a 9-inch pie dish.
  3. Slice the tomatoes about 1/4 inch thick and sprinkle with salt.
  4. Sauté the onions in olive oil until soft and translucent.
  5. Mix the sautéed onions, sliced tomatoes, cheddar cheese, mayonnaise, black pepper, and basil in a bowl.
  6. Fill the pie crust with the mixture evenly.
  7. Bake for 25–30 minutes until golden and bubbly.
  8. Cool for 10-15 minutes before serving.

Notes

For a nutritional boost, add spinach or kale. Experiment with different cheeses for unique flavors.
