Southwest Chicken Wrap

A delightful and flavorful wrap filled with marinated chicken, vibrant veggies, and spices, perfect for any meal of the day.

  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper, diced
  • ¾ cup corn kernels
  • 1 cup black beans
  • ¼ cup cotija cheese

Instructions

  1. Marinade the Chicken: In a shallow bowl, mix together the lime juice, chili powder, and chipotle pepper in adobo. Toss in the chicken breasts and let them marinate for at least 30 minutes.
  2. Cook the Chicken: Heat a skillet over medium heat, drizzle it with olive oil, and add the marinated chicken breasts. Cook for about 6-7 minutes per side, or until fully cooked.
  3. Prep the Rice: While the chicken cooks, prepare your rice according to package instructions.
  4. Chop Your Veggies: Dice the red bell pepper while keeping an eye on the chicken.
  5. Mix It All Up: Once cooked, let the chicken rest, then slice it into strips. In a bowl, combine the chicken, cooked rice, corn, black beans, and bell pepper.
  6. Assemble the Wraps: Lay out tortillas, spoon the filling onto each, sprinkle with cotija cheese, then roll them tightly.
  7. Serve and Enjoy: Slice the wraps in half, serve with lime wedges and your favorite dipping sauce.

Notes

Leftovers can be stored in the refrigerator for up to three days. For best results, keep the tortillas separate from the filling.
