  • 1 lb Ground Turkey
  • 1/2 cup Dried Cranberries
  • 1 cup Wild Rice
  • Olive Oil
  • Salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the acorn squash by slicing in half and scooping out seeds, then rub with olive oil and sprinkle with salt.
  3. Roast the squash cut-side down in a baking dish for 25-30 minutes.
  4. Cook wild rice according to package instructions.
  5. Sauté ground turkey in olive oil over medium-high heat until browned; season with salt, pepper, and herbs.
  6. Add cranberries and cooked wild rice to the turkey mix and stir for a couple of minutes.
  7. Fill the roasted squash halves with the turkey and rice mixture.
  8. Bake again for 15-20 minutes.
  9. Final touches with fresh herbs or balsamic glaze before serving.
