Refreshing Tomato, Cucumber, and Onion Salad

A bright, refreshing summer salad that perfectly combines tomatoes, cucumbers, and onions with a zesty vinaigrette.

  • 2 large tomatoes, diced
  • 1 cucumber, peeled and diced
  • 1 medium onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Prep your veggies: Wash your tomatoes and cucumber under cold running water. Dice the tomatoes into bite-sized pieces and dry them on a paper towel.
  2. Cucumber delight: Peel your cucumber and dice it into small chunks, about the same size as the tomatoes.
  3. Onion magic: Slice your onion thinly. If raw onions are too strong, soak in cold water for 10 minutes to mellow out.
  4. Mix it up: Combine the diced tomatoes, cucumbers, and sliced onions in a large bowl and toss gently.
  5. Dressing time: In a separate jar, mix the olive oil, apple cider vinegar, sugar, salt, and pepper. Shake until combined. Drizzle over the salad mixture, and toss to coat.
  6. Garnish and serve: Chop fresh herbs and sprinkle over the salad.
