Tzatziki Chicken Salad

A protein-packed, refreshing salad mixing shredded chicken, tzatziki, and fresh veggies, perfect for any occasion.

Ingredients

  • 1 cup Greek yogurt
  • 2 cups shredded chicken
  • 1 cucumber, diced
  • 1/4 red onion, finely chopped
  • 1 lemon, juiced
  • 1 clove garlic, minced
  • 2 tbsp fresh dill (or other herbs)
  • Salt and pepper to taste

Instructions

  1. Prepare the chicken: If you’re using raw chicken, season it with salt, pepper, and herbs. Grill or bake at 375°F (190°C) for 25-30 minutes, then shred.
  2. Make the tzatziki: In a bowl, combine Greek yogurt, lemon juice, garlic, salt, and dill. Mix until creamy.
  3. Chop the veggies: Dice cucumber and chop red onion.
  4. Combine everything in a bowl, mixing well to coat the chicken with tzatziki.
  5. Chill for 30 minutes if desired.
  6. Taste and adjust seasoning before serving.

Notes

You can use rotisserie chicken for convenience or substitute chicken with chickpeas for a vegetarian option.
