Cheesy Meatloaf Casserole

A warm, gooey, cheesy meatloaf casserole that’s easy to make and perfect for family dinners.

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheese
  • 2 eggs
  • 1 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the chopped onion in a large skillet over medium heat until translucent (about 4-5 minutes), then add minced garlic for another minute.
  3. Prepare the meat mixture by combining ground beef, sautéed onion and garlic, breadcrumbs, shredded cheese, eggs, ketchup, Worcestershire sauce, salt, and pepper in a large bowl. Add mixed veggies if desired.
  4. Shape the mixture into an even layer in a greased casserole dish and bake for about 45 minutes or until the internal temperature reaches 160°F (70°C).
  5. Cheesy topper: 10 minutes before it’s done, add extra shredded cheese on top and return to the oven until melted.
  6. Let it rest for about 10 minutes before slicing.

Notes

This casserole freezes well and is perfect for meal prep. Serve with a side salad or steamed vegetables for a balanced meal.
