Mushroom Rice

A comforting and satisfying Mushroom Rice recipe that’s easy to prepare and packed with flavor.

  • 2 tablespoons butter (or olive oil)
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 8 ounces (225 g) fresh mushrooms, sliced (white button or cremini)
  • 1 cup (200 g) long-grain white rice, rinsed and drained
  • 2 cups (480 ml) low-sodium chicken or vegetable broth
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried thyme (optional)
  • 2 tablespoons fresh parsley (chopped for garnish)

Instructions

  1. Sauté the Aromatics: In a large skillet, melt the butter (or heat up olive oil) over medium heat. Once it’s beautifully bubbly, toss in the finely chopped onion. Sauté it for about 2-3 minutes until it’s translucent. Then, add the minced garlic and sauté for another minute, just until fragrant.
  2. Cook the Mushrooms: Next up, add those luscious mushrooms. Stir them around and let them cook until they soften and release their juices—about 5-7 minutes.
  3. Add the Rice: Once your mushrooms are all lush and tender, it’s time to add the rinsed rice to the pan. Stir everything together and let the rice toast for 1-2 minutes.
  4. Pour in the Broth: Pour in the low-sodium broth, and sprinkle in the salt, black pepper, and thyme if you’re using it. Give it a stir, bring it to a boil, then reduce to a simmer. Cover the skillet with a lid and let it cook for about 15-20 minutes.
  5. Fluff and Garnish: After about 20 minutes, check to see if the rice has absorbed all the liquid. If so, remove it from the heat, and let it sit covered for another 5 minutes. Finally, uncover, fluff the rice with a fork, sprinkle with fresh parsley, and enjoy!

Notes

For added flavor, stir in leftover veggies, or a splash of white wine after sautéing the aromatics.
