Nectarine Salsa

A vibrant and unexpected twist on classic salsa, combining sweet nectarines with zesty lime and fresh herbs.

Ingredients

  • 23 nectarines, diced (about 2 cups)
  • 1 tomato, diced (about 1 cup)
  • 1 cup cilantro, minced
  • 1/4 cup shallot, diced (or substitute red onion)
  • 1 bird’s eye chili, seeds removed, finely diced
  • 1 tablespoon lime juice (plus more to taste)
  • 1 teaspoon honey or sugar

Instructions

  1. Gather your ingredients.
  2. Prepare the nectarines by washing, halving, and dicing them.
  3. Chop the tomato and add it to the bowl.
  4. Mince the cilantro and stir it in with the other ingredients.
  5. Dice the shallot and add it to the mix.
  6. Add the finely diced chili.
  7. Squeeze the lime juice into the bowl.
  8. Measure out honey or sugar and add it too.
  9. Mix everything gently together.
  10. Taste and adjust seasoning as needed.
  11. Chill for at least 30 minutes before serving.

Notes

Perfect as a dip for tortilla chips or a topping for grilled meats and fish.
