Apple Cider Muffins

A delightful fall treat made with apple cider, perfect for breakfast or a cozy snack.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup apple cider
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon salt
  • 1 cup diced apples (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your muffin tin by greasing it or using paper liners.
  3. Mix the flour, baking powder, apple pie spice, and salt in a large bowl.
  4. Combine the apple cider, sugar, vegetable oil, and eggs in another bowl.
  5. Blend the wet mixture into the dry mixture, stirring gently.
  6. Fold in the diced apples if using.
  7. Scoop the batter into the muffin cups, filling each about two-thirds full.
  8. Bake for about 20-25 minutes, or until a toothpick comes out clean.
  9. Cool the muffins for 5 minutes in the tin before transferring them to a wire rack.

Notes

These muffins can be served with a sprinkle of powdered sugar, a dollop of cream cheese, or a smear of butter.
