Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8-inch round cake pan with olive oil or line with parchment paper.
  2. Whisk the olive oil and sugar in a large bowl until well blended. Add the eggs one at a time, mixing them thoroughly.
  3. Stir in the lemon zest and juice, combining well.
