Mandarin Orange Jello Salad

A vibrant and creamy Mandarin Orange Jello Salad that brings nostalgia and cheer to any gathering.

  • 6-ounce package orange gelatin
  • 2 (3-ounce) packages vanilla cook and serve pudding mix
  • 4 cups hot water
  • 8 ounces Cool Whip
  • 16-ounce can mandarin oranges (drained)

Instructions

  1. Dissolve the Gelatin: Begin by boiling 4 cups of hot water. Once boiling, remove from heat and stir in the 6-ounce package of orange gelatin. Mix it well until fully dissolved.
  2. Mix the Pudding: In a separate bowl, combine the two packages of vanilla pudding mix with another 4 cups of hot water. Stir it vigorously until it’s smooth.
  3. Combine the Gelatin and Pudding: Slowly pour the pudding mixture into the dissolved gelatin. Stir gently to combine.
  4. Add the Cool Whip: Fold in the Cool Whip gently. Don’t whisk; fold!
  5. Incorporate the Mandarins: Fold the drained mandarin oranges into the mixture.
  6. Chill: Pour the mixture into a serving bowl or a decorative mold. Cover and let it chill in the refrigerator for at least 4 hours.
  7. Serve and Enjoy: Garnish with extra mandarin slices, a dollop of Cool Whip, and some mint leaves.

Notes

Great for potlucks, this dish can be made a day ahead. Consider adding diced pineapple or berries for variations!
