Moist Pumpkin Cake

A delightful and nourishing pumpkin cake infused with warm spices, perfect for fall celebrations.

  • 1 1/2 cups sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup cinnamon sugar mixture (for topping)

Instructions

  1. Preheat the oven and prep your pan by greasing a 9×13 inch baking pan or lining it with parchment paper.
  2. Whisk the dry ingredients together in a large mixing bowl.
  3. Mix the wet ingredients in a separate bowl until well combined.
  4. Combine the wet mixture into the dry ingredients and gently fold until just combined.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Add the cinnamon sugar mixture generously on top.
  7. Bake in the preheated oven for 30-35 minutes.
  8. Cool the cake in the pan for 10-15 minutes and then transfer to a wire rack to cool completely.
