Strawberry Banana Bread

A delightful bread that combines ripe bananas and juicy strawberries, perfect for breakfast, snacks, or dessert.

  • 2 ripe bananas, mashed
  • 1 cup fresh strawberries, chopped
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep a 9×5 inch loaf pan by greasing it with butter or lining it with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth with some small chunks.
  4. Combine the mashed bananas with melted butter, beaten egg, vanilla extract, brown sugar, and sugar; stir well.
  5. Mix the all-purpose flour, baking soda, and salt in a separate bowl.
  6. Combine the dry ingredients with the wet mixture gently until just combined.
  7. Fold in the chopped strawberries, reserving some for topping if desired.
  8. Pour the batter into the prepared loaf pan and smooth the top.
  9. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  10. Cool in the pan for 10-15 minutes, then transfer to a wire rack.

Notes

Serve toasted with butter or cream cheese, or alongside Greek yogurt for a more substantial breakfast.
