Strawberry Lemon Blondies

Deliciously sweet and tangy blondies infused with fresh strawberries and zesty lemon—a perfect treat for any occasion.

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons of strawberry juice (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8 inch baking pan by greasing it or lining it with parchment paper.
  3. Mix the melted butter, brown sugar, and granulated sugar in a bowl until smooth and glossy.
  4. Add the eggs and vanilla extract, whisking until fully combined.
  5. Combine the flour, baking powder, and salt in a separate bowl, then gradually mix into the wet ingredients.
  6. Fold in the chopped strawberries, lemon zest, and lemon juice gently.
  7. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  8. Cool the blondies for about 10 minutes, then transfer to a wire rack.
  9. Mix powdered sugar and strawberry juice to make the glaze, then drizzle it over the cooled blondies.

Notes

For a dairy-free option, substitute butter with coconut oil. To make it vegan, replace eggs with flax eggs and use plant-based butter.
