The Best Zucchini Bread

A delightful zucchini bread that combines nostalgia and flavor, perfect for snacking or breakfast.

Ingredients

Scale
  • 2 cups grated zucchini
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chocolate chips (optional)
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Prep Your Ingredients: Start by preheating your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal later.
  2. Grate Your Zucchini: Grab that fresh zucchini and get grating! Use the coarse side of a box grater for the best texture. Once you have your two cups, set them aside in a clean kitchen towel and wring out any excess water. This step is crucial for the perfect bread!
  3. Mix the Dry Ingredients: In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, ground cinnamon, and any optional spices you love.
  4. Combine the Wet Ingredients: In a separate bowl, mix the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs one at a time, blending well after each addition. Don’t forget that splash of vanilla extract!
  5. Incorporate the Grated Zucchini: Stir in the grated zucchini to the wet mixture until well combined.
  6. Combine Dry and Wet Mixtures: Gradually add the dry mixture to the wet mixture, folding gently with a spatula until just combined.
  7. Add the Optional Extras: If you’re including chocolate chips or nuts, sprinkle those in and give it a few gentle folds.
  8. Pour and Bake: Transfer your batter to the prepared loaf pan and smooth the top with a spatula. Bake for about 50-60 minutes until golden brown.
  9. Cool and Enjoy: Let your bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Squeeze out the excess moisture from the zucchini before adding it to the batter for better texture.
