Cheesy Ground Beef and Rice Casserole

A cozy and comforting casserole featuring ground beef, rice, and gooey cheddar cheese, perfect for busy evenings.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Brown the meat in a skillet over medium heat, cooking until browned (about 5-7 minutes). Drain excess fat if needed.
  2. Add the diced onion and minced garlic into the pan and sauté for 3-4 minutes until the onion is translucent.
  3. Combine in a large mixing bowl the cooked rice, cream of mushroom soup, milk (or broth), paprika, and half of the cheddar cheese. Mix until well-blended.
  4. Add the browned beef mixture to the rice mixture and stir until combined. Season with salt and pepper to taste.
  5. Bake at 350°F (175°C) in a greased 9×13 inch casserole dish for 25 minutes covered with foil, then remove foil and bake for an additional 10-15 minutes until bubbly and golden.
  6. Garnish with fresh parsley (if using) before serving.

Notes

For a spicier version, you can mix in some diced jalapeños or use pepper jack cheese. This casserole can be made ahead of time and refrigerated.
