Cheesy Baked Gnocchi Casserole

A comforting delight combining tender potato gnocchi, savory Italian sausage, and a luscious blend of cheeses, perfect for busy weeknights.

Ingredients

  • 1 package of potato gnocchi
  • 1 pound Italian sausage
  • 1 can (15 oz) of tomato sauce
  • 1 cup heavy cream
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cook the Italian sausage in a skillet with olive oil for 7-10 minutes.
  3. Add the spinach and cherry tomatoes to the skillet and cook for 3-4 minutes.
  4. Pour in the tomato sauce and heavy cream, and simmer for 5 minutes.
  5. Cook the gnocchi in boiling salted water for 2-3 minutes, then drain.
  6. Combine the gnocchi with the sausage and sauce mixture.
  7. Prepare a baking dish and pour the mixture in, topping with mozzarella and Parmesan.
  8. Bake for 20-25 minutes until bubbly and golden brown.
  9. Let sit for 5 minutes before serving.

Notes

Feel free to substitute ground turkey or chicken for a lighter version, or use non-dairy cream substitutes as desired.
