Balsamic Pot Roast

A cozy classic dish featuring a succulent chuck roast marinated in balsamic vinegar for a flavorful and tender meal.

Ingredients

  • Chuck Roast (3-4 lbs)
  • Carrots (4-5, chopped)
  • Balsamic Vinegar (1 cup)
  • Salt (to taste)
  • Black Pepper (to taste)
  • Onions (2, quartered)
  • Garlic (4 cloves, minced)
  • Beef Broth (2 cups)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Season both sides of the chuck roast with salt and black pepper.
  3. Sear the roast in a large oven-safe pot with olive oil over medium-high heat for 4-5 minutes on each side.
  4. Remove the roast and sauté onions and garlic in the same pot for about 3 minutes.
  5. Pour in the balsamic vinegar to deglaze the pot.
  6. Add the roast back into the pot along with chopped carrots and beef broth.
  7. Cover and cook in the oven for 3-4 hours, or until fork-tender.
  8. Rest the roast for 15 minutes before slicing.

Notes

For a thicker sauce, reduce the liquid on the stove after cooking the roast.
