Cheesy Ground Beef and Rice Casserole

A heartwarming family favorite marrying comfort with simplicity, featuring ground beef, cheese, and rice.

  • 1 lb lean ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 tsp paprika
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium heat along with the diced onion until no longer pink.
  3. Add the minced garlic during the last minute of cooking the beef.
  4. Mix in the cooked rice and cream of mushroom soup, along with the milk or beef broth.
  5. Season with paprika, salt, and pepper.
  6. Cheesy layering: Stir in 1 ½ cups of shredded cheddar cheese.
  7. Transfer the mixture to a greased 9×13 inch baking dish.
  8. Top with the remaining ½ cup of shredded cheddar cheese.
  9. Bake for about 25–30 minutes, until bubbly and golden on top.
  10. Serve warm, garnished with chopped parsley if desired.

Notes

This casserole can be prepared ahead of time and freezes well. Mix in additional toppings like sour cream or vegetables for variations.
