Cheesy Loaded Meatloaf Casserole

A cozy and hearty casserole featuring savory meatloaf, creamy mashed potatoes, and gooey cheese, topped with crispy bacon.

  • 1 lb Ground Beef
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 1/2 cup Milk
  • 1 medium Onion
  • 1 tsp Garlic Powder
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 tbsp Worcestershire Sauce
  • 1/2 cup Ketchup
  • 3 cups Mashed Potatoes
  • 1 cup Cheddar Cheese
  • 1/2 cup Bacon
  • 2 tbsp Green Onions/Chives

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the meat mixture by combining the ground beef, breadcrumbs, egg, milk, chopped onion, garlic powder, salt, pepper, Worcestershire sauce, and ketchup in a large mixing bowl.
  3. Shape the mixture into a loaf and place it in a greased, oven-safe casserole dish.
  4. Bake the meatloaf for about 45 minutes.
  5. Prepare the mashed potatoes while the meatloaf is baking.
  6. Layer the mashed potatoes across the top of the meatloaf, smoothing it out.
  7. Add the cheddar cheese on top generously.
  8. Sprinkle bacon on the top if using.
  9. Return the casserole to the oven for another 15–20 minutes, until the cheese is bubbly and lightly browned.
  10. Cool for about 10 minutes before garnishing with chopped green onions or chives.
  11. Serve warm and enjoy!
