Cheesy Taco Potatoes

A comfort dish featuring crispy potatoes topped with spiced ground beef and melted cheese, perfect for cozy dinners or gatherings.

  • 1 ½ lbs russet potatoes (scrubbed and cut into small cubes)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • ½ tsp ground cumin
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 lb ground beef (or ground turkey)
  • 1 packet (1 oz taco seasoning or homemade blend)
  • ⅓ cup water
  • 1 ½ cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • ½ cup sour cream (for topping)
  • ¼ cup chopped green onions or cilantro
  • Optional: diced tomatoes, jalapeños, avocado slices

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed russet potatoes with olive oil, garlic powder, onion powder, smoked paprika, chili powder, cumin, salt, and pepper in a large bowl.
  3. Spread the seasoned potatoes in an even layer on a baking sheet lined with parchment paper. Bake for 25–30 minutes or until golden brown and crispy.
  4. Heat a large skillet over medium-high heat and add your ground beef (or turkey). Break up the meat and cook until brown.
  5. Stir in the taco seasoning and water. Let the mixture simmer for about 5–7 minutes.
  6. Layer the potatoes in a large serving dish, spoon the seasoned meat over them, and sprinkle the shredded cheese on top. Pop it back in the oven for an additional 5–7 minutes.
  7. Top with sour cream, green onions, or cilantro, and any additional toppings desired.

Notes

Feel free to customize by adding toppings like diced tomatoes or jalapeños. Pair with a fresh side salad for a complete meal.
