Cowboy Cornbread Casserole

A hearty casserole with seasoned ground beef, vibrant veggies, and a fluffy cornbread topping.

Ingredients

  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 box cornbread mix
  • 1 egg
  • 1 cup milk
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Brown the ground beef in a large skillet over medium heat, about 5-7 minutes.
  3. Add the beans, corn, and diced tomatoes; simmer for about 5 minutes.
  4. Season with taco seasoning; cook for another 2-3 minutes.
  5. Prepare the cornbread mix in a separate bowl with egg and milk.
  6. Assemble by spreading the beef mixture in a greased baking dish, then pour the cornbread mix on top.
  7. Top with shredded cheese.
  8. Bake for 25-30 minutes, or until golden brown.
  9. Cool and slice into squares to serve.

Notes

For a vegetarian option, replace ground beef with TVP or mushrooms. Can be made ahead and stored in the fridge for up to 24 hours before baking.
