Cream Cheese Corn Casserole

A comforting and delicious corn casserole made with cream cheese and simple ingredients, perfect for any gathering.

  • 2 cups whole kernel corn, drained
  • 1 cup cream-style corn
  • 4 oz cream cheese, softened and cubed
  • ¼ cup unsalted butter, melted
  • ½ cup whole milk
  • 1 large egg
  • ½ cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the cream cheese, melted butter, whole milk, and egg in a large bowl until smooth.
  3. Fold in the whole kernel corn and cream-style corn.
  4. Whisk together flour, sugar, baking powder, salt, and pepper in another bowl.
  5. Add the dry mixture to the wet ingredients and stir until just combined.
  6. Fold in shredded cheddar cheese, if using.
  7. Pour the mixture into a greased 9×13 inch baking dish and smooth the top.
  8. Bake for 45-50 minutes, or until the top is golden and a toothpick comes out clean.
  9. Cool for about 10 minutes before serving.

Notes

Garnish with fresh chopped parsley or chives for added flavor. This casserole pairs well with grilled chicken and a green salad.
