French Onion Chicken

Succulent chicken breasts topped with caramelized onions and creamy Gruyère cheese, baked to perfection for a comforting dish.

  • 4 boneless, skinless chicken breasts
  • 2 large sweet onions (Vidalia or Walla Walla)
  • 1 cup Gruyère cheese, shredded
  • 2 tablespoons olive oil or butter
  • 1 tablespoon fresh thyme
  • Salt and pepper, to taste
  • 1/2 cup chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Caramelize the onions in a skillet with olive oil and salt for 20-25 minutes until golden brown.
  3. Season the chicken breasts with salt, pepper, and thyme.
  4. Sear the chicken in a pan for 3-4 minutes on each side until golden.
  5. Layer the seared chicken in a baking dish, topping with caramelized onions and Gruyère cheese.
  6. Add chicken broth around the chicken.
  7. Bake covered for 25 minutes, then uncover and bake for 10-15 minutes until cheese is bubbly.
  8. Garnish and serve after resting for 5 minutes.

Notes

Serve over fluffy quinoa or alongside roasted vegetables. Garnish with fresh thyme or parsley.
