  • 2 large boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1 lb twisted pasta (fusilli, penne, or rotini)
  • 3 tbsp unsalted butter (divided)
  • 4 cloves fresh garlic (minced)
  • 1.5 cups heavy cream
  • 0.5 cup chicken broth (low-sodium recommended)
  • 1 cup freshly grated Parmesan cheese (not pre-shredded)
  • 1 tsp Italian seasoning (divided)
  • 0.25 tsp red pepper flakes (optional)
  • Salt and black pepper (to taste)
  • 2 tbsp fresh parsley (chopped, for garnish)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil, cook pasta until al dente, then reserve a cup of pasta water and drain.
  2. Sear the chicken: In a large skillet, melt 1 tablespoon of butter, add chicken, season with salt, pepper, and half the Italian seasoning, and sear for 5-7 minutes.
  3. Sauté the garlic: Add another tablespoon of butter to the skillet, toss in garlic, and sauté until fragrant.
  4. Make the cream sauce: Pour in heavy cream and chicken broth, stir, simmer, and then mix in remaining butter, grated Parmesan, red pepper flakes, and remaining Italian seasoning.
  5. Combine pasta and chicken: Toss the cooked pasta and seared chicken into the skillet, adding reserved pasta water if the sauce is too thick.
  6. Garnish and serve: Sprinkle chopped parsley on top before serving, adjusting seasoning if needed.
