Creamy Tomato Chicken Breast

A flavorful dish featuring chicken breast cooked in a creamy tomato sauce, perfect for busy nights and gatherings.

  • 400 g Cherry Tomatoes
  • 1 Whole Garlic Bulb
  • 2 tbsp Olive Oil
  • ¼ Cup Heavy Cream
  • Baby Potatoes (sliced ½ inch thick)
  • ¼ Cup Frying Oil
  • Salt (to taste)
  • Garlic Powder
  • Paprika
  • 1 Dried Rosemary
  • 1 teaspoon Italian Seasoning
  • ½ teaspoon Red Pepper Flakes (adjust to taste)
  • Fresh Basil Leaves (chopped)
  • Chicken Breast (boneless, skinless)
  • Black Pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the baby potatoes by tossing them with ¼ cup frying oil, salt, garlic powder, and paprika.
  3. Bake the potatoes for about 20-25 minutes until golden brown and fork-tender.
  4. Season the chicken breasts with olive oil, salt, garlic powder, paprika, oregano, and black pepper.
  5. Sear the chicken in an oven-proof skillet over medium-high heat for 3-4 minutes on each side.
  6. Add cherry tomatoes, garlic bulb, Italian seasoning, and red pepper flakes to the skillet.
  7. Combine in the heavy cream and gently stir.
  8. Finish by baking the dish for another 15-20 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  9. Add fresh basil leaves after removing from the oven.

Notes

Serve with crispy baby potatoes, garnish with basil and optionally some grated Parmesan cheese.
