French Onion Chicken Orzo Casserole

A warm, hearty casserole combining the rich flavors of French onion soup with quick-cooking orzo pasta and tender shredded chicken.

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 large yellow onions (thinly sliced)
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 garlic cloves (minced)
  • 1 1/2 cups orzo pasta
  • 2 cups cooked shredded chicken
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Optional: 1/2 teaspoon Worcestershire sauce or balsamic glaze

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the butter and olive oil in a large oven-safe skillet. Add the onions, sugar, and salt, stirring until softened (about 10 minutes).
  3. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Cook the orzo pasta, stirring gently for about a minute.
  5. Mix in the shredded chicken, thyme, black pepper, chicken broth, and heavy cream, stirring until well combined.
  6. Cheese it up by stirring in half of the mozzarella and Parmesan cheeses.
  7. Bake in the oven for 25-30 minutes until golden and bubbly.
  8. Cool for 5 minutes before serving.

Notes

Serve with fresh parsley or chives and a side salad for a complete meal.
