Garlic Butter Mushroom Rice

A comforting and delicious garlic butter mushroom rice that pairs perfectly with various main dishes.

  • 6 tablespoons unsalted butter
  • 12 oz fresh mushrooms, sliced
  • 3 tablespoons fresh minced garlic
  • 1 cup long-grain white rice
  • 1/2 teaspoon freshly cracked black pepper
  • 1/2 teaspoon dried thyme
  • 2 (10-oz) cans beef consommé (or vegetable broth for vegetarian version)
  • Fresh chives for garnish (optional)

Instructions

  1. In a large skillet or saucepan over medium heat, melt the butter. Once melted, add the minced garlic and sauté until fragrant, about 1-2 minutes.
  2. Add your sliced mushrooms to the buttery goodness in the pan. Stir occasionally, allowing them to cook until they’ve released their moisture and are golden brown, about 5-7 minutes.
  3. Once your mushrooms are perfectly cooked, stir in the rice, pepper, and dried thyme. Sauté for another 2-3 minutes, ensuring the rice is well-coated in the buttery mushroom mixture.
  4. Pour in the beef consommé (or vegetable broth) and bring the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pan. Let it simmer for about 15-20 minutes.
  5. Once your rice is cooked, remove the pan from heat. Allow it to sit covered for an additional 5 minutes, then fluff the rice with a fork and sprinkle fresh chives on top.

Notes

This dish can be made ahead of time and stored in an airtight container in the fridge. Reheat before serving with a splash of broth.
