Kielbasa Sausage Cheesy Potato Casserole

A hearty and comforting casserole with smoky kielbasa, creamy potatoes, and gooey cheese.

  • 1 lb (450 g) smoked kielbasa sausage, sliced into ½-inch pieces
  • 1 bag (32 oz / 900 g) frozen diced hash brown potatoes, thawed
  • 1 can (10.5 oz / 295 g) cream of chicken soup (or cream of mushroom)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese (divided)
  • ½ cup chopped green onions (or white onion sautéed)
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 2 tablespoons butter (melted)
  • Optional: 1 cup crushed cornflakes or Ritz crackers for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your ingredients by gathering them all together.
  3. Mix in a large bowl the thawed hash brown potatoes, sliced kielbasa, cream of chicken soup, sour cream, 1¾ cups of shredded cheddar cheese, chopped green onions, garlic powder, black pepper, and paprika.
  4. Add the melted butter and stir everything gently.
  5. Transfer the mixture to a greased 9×13-inch baking dish.
  6. Top with the remaining shredded cheese and optional crushed cornflakes or Ritz crackers.
  7. Bake for about 45 minutes, until bubbly and golden brown.
  8. Serve warm and enjoy!

Notes

Feel free to incorporate veggies or swap the sausage for a plant-based version to make it healthier. Leftovers are excellent for quick lunches!
