Loaded Chicken Hashbrown Casserole

A comforting and hearty casserole featuring crispy hashbrowns, juicy chicken, and melty cheese topped with crispy bacon.

  • 2 cups frozen hashbrowns
  • 2 cups cooked chicken, shredded or diced
  • 1 cup bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a large skillet until crispy.
  3. Remove the bacon and drain on paper towels.
  4. Add the shredded or diced chicken to the skillet with leftover drippings and season with garlic powder, salt, and pepper.
  5. In a large mixing bowl, combine the hashbrowns, chicken, crumbled bacon, cheddar cheese, cream of chicken soup, and sour cream, mixing until evenly coated.
  6. Gently pour the mixture into a greased 9×13-inch baking dish.
  7. Cover with aluminum foil and bake for about 25 minutes.
  8. Remove the foil, sprinkle with extra cheddar cheese, and bake for another 10-15 minutes until golden brown.
  9. Let it rest for 5-10 minutes before serving.
