Mongolian Ground Beef Noodles

  • 1 lb lean ground beef
  • 4 tsp fresh grated ginger
  • 6 cloves garlic, minced
  • ½ cup brown sugar
  • ½ cup low-sodium beef broth
  • ½ cup low-sodium soy sauce
  • ¼ cup hoisin sauce
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 8 oz linguine or fettuccine noodles
  • 2 tbsp cornstarch
  • ¼ cup water
  • 4 green onions, sliced

Instructions

  1. Cook Your Noodles: Start by boiling a pot of salted water and cooking your linguine or fettuccine noodles according to package instructions. Drain and toss in olive oil.
  2. Brown the Beef: In a large pan over medium-high heat, add your lean ground beef and brown for 5–7 minutes. Drain off excess fat.
  3. Adding Aromatics: Add minced garlic and grated ginger to the beef. Cook for about a minute until fragrant.
  4. Making the Sauce: In a bowl, whisk together brown sugar, beef broth, soy sauce, hoisin sauce, black pepper, and red pepper flakes. Pour over the beef and simmer.
  5. Thickening the Sauce: Mix cornstarch and water until smooth; drizzle into the simmering sauce, stirring constantly until thickened.
  6. Combining it All: Stir in your cooked noodles to coat them in the sauce.
  7. Finishing Touches: Add sliced green onions and stir gently. Serve hot.

Notes

For extra flavor, add a squeeze of fresh lime or lemon juice before serving.
