Nectarine Crisp with Cinnamon Oat Pecan Streusel

A nostalgic and delightful dessert featuring juicy nectarines topped with a crunchy streusel made of oats, pecans, and cinnamon.

  • 1 cup all-purpose flour
  • 1 cup toasted chopped pecans
  • 1 1/3 cups old-fashioned oats
  • 1 cup light brown sugar
  • 3/4 teaspoon cinnamon
  • 9 tablespoons unsalted butter, very soft
  • 1/2 teaspoon kosher salt
  • 78 cups chopped nectarines (~89 large nectarines)
  • 3/4 cup granulated sugar
  • 2 tablespoons cornstarch
  • 3/4 teaspoon cinnamon
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and chop the nectarines into bite-sized pieces.
  3. In a large bowl, combine chopped nectarines, granulated sugar, cornstarch, cinnamon, and lemon juice. Stir gently and set aside.
  4. In another bowl, mix flour, chopped pecans, oats, brown sugar, cinnamon, and salt.
  5. Add softened unsalted butter to the dry mixture and mix until it resembles coarse crumbs.
  6. Pour nectarines into a greased baking dish and evenly spread them out.
  7. Sprinkle the streusel topping over the nectarines.
  8. Bake for 40-45 minutes or until golden brown and bubbling.
  9. Let cool for 10-15 minutes before serving.

Notes

Serve with vanilla ice cream or Greek yogurt spiked with honey for a delightful finish.
