Pumpkin Chicken Meatballs with Sage Cream Sauce

  • 1/2 cup canned pumpkin purée
  • 1/3 cup plain breadcrumbs
  • 1 egg
  • 1 garlic clove, finely grated
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 tablespoon fresh sage, chopped

Instructions

  1. Prepare your mixture: In a mixing bowl, combine the ground chicken, pumpkin purée, breadcrumbs, egg, grated garlic, onion powder, salt, and pepper. Use your hands to mix everything gently until just combined.
  2. Form the meatballs: Using about a tablespoon of the mixture, roll it into a ball and place them on a baking sheet lined with parchment paper.
  3. Brown the meatballs: Heat olive oil in a large skillet over medium heat. Cook the meatballs in batches for about 4-5 minutes on each side until golden brown.
  4. Make the sage cream sauce: In the same skillet, pour in the heavy cream and bring to a low simmer. Add the fresh sage and whisk continuously until thickened.
  5. Return the meatballs to the sauce: Gently add the meatballs back into the skillet to simmer in the sauce for another 3-5 minutes.
  6. Taste and adjust: Adjust the seasoning with salt or pepper as needed before serving.

Notes

Serve with crusty bread or over quinoa or whole-grain pasta. For variations, add cheese inside the meatballs or spice them up with red pepper flakes.
